I cooked.

Sauteed onions, carrots, cabbage in slivers with s&p in olive oil. Jullian deli ham and add in, put everything in a separate bowl. Let it cool a bit and add some shredded cheddar.

Crack an egg and add enough of the rest to make it full, then put in a hot pan and put a tortilla on top. Let it cook and roll it up.
