See, I like it and we even to a mini Tday in July or Aug. Do a turkey & stuffing roulade, get the frozen cranberry sauce out, do some veggies, do a mini Tday dessert like a pumpkin pudding and/or apple hand pies.....

Enough for a meal and a few leftovers but not the WHOLE shebang.

I've done goose but .... oy. A lot of fat there, not sure I rendered it right. In fact, this is the time of year I enter into the "what the fuck protein are we having for Christmas" stage.

That's the trick; render out enough fat so there isn't too much in the end product, and enough to fry the skin (from the inside!) but not so much as the skin burns and the bird dries out.

I have had good luck making buffalo wings by par-steaming them. Wings have a similar issue; not much meat, lots of fat.

Steaming on a small piece like that (or an array of them) renders out the fat and then you can put them in a HOT oven and they crisp up pretty well. Took a few tries to get it but..........

Imostly get shoved away from the kitchen here but maybe I can get them to make some of these. I admit, I'm not always big on Bird. I'm one of the only southerners alive who isn't that big on chicken
