Good grief....that thing I baked is SWEET. Like, the kind of sweet where you marvel this is SWEET while you're eating it, then reflect wow that was SWEET afterwards, and then a little bit later realize it's really too SWEET...but I kind of want another piece anyway.

Yup.

I think in the future I'm going to make little individual Pavlovas (Pavlovi?) to fill with peaches and cream.

That said, it's REALLY easy and fun to make....if you get the temperature right.

Cat, Pavlova is a meringue that has corn starch and vinegar in it so when you bake it, it gets crispy on the outside and slightly marshmallow-ish in the inside. You shape it into a bowl, bake it, let it cool, then fill it.
