I was using a King Arthur's for extra-tangy.

It's a 24 hr process, MOST of which is resting. I can only imagine LOTS of gluten development.

Yesterday went fine. Today I'm supposed to take it out of the fridge and add the rest of the flour and the salt.

I forgot to add the rest of the flour and the salt.

I was adding 1/2 cup of flour at a time b/c it was SO STICKY everytime I turned it out to punch it down......

Finally realized "oh shit, the flour...." figured out I needed maybe 1 cup more? From guess and feel?

Oh goodness!

THEN remembered the salt.

So I added that, shaped it, banged it in the baskets to bench proof.

Had to add that a 1/2 tsp at a time and mix it in.....

((sigh))

I think I might wait to start the other bread till tomorrow. It's an easier recipe but I want to see how THIS crap turns out.
