Well! ((brightly)) THAT was disgusting....

((sigh)) I spent about four hours last night.... HOURS.... cutting and salting and drying and baking zucchini per the recipe to make a zucchini lasagna today. Prep'd all the zukes and had already decide I wouldn't ever make this recipe again but what the hell, at that point, right?

This morning I assembled the lasagna (zukes instead of noodles, no meat) and baked it off. DAMN. I mean... I was easily the most perfect (looking) lasagna I have ever made. Period. No question. Made a salad and heated garlic knots in the arvo. Easy dinner, right?

Served the meal, had a bite.... NOPE NOPE NOPITY NOPE.

WAY too salty. 😢

Like... inedible, for me.

The Things like it, DH ate it.

((Sigh)) Bummed.

I mean... I thought briefly about washing the zuke planks before baking but thought "The point is to get RID of moisture so...." I didn't.

These were BIG Zukes, SIX of them.

And as it turns out I only had one sheet pan that didn't burn them so I was stuck with that square footage to process them.

In good news, though, I got through the day w/out meds. Def. on the mend.
