I have got 2/3 salads done for lunches and the remaining one needs 1 ingredient which DH is going to get later.

This week I have a Greek, a Cobb, and a TexMex inspired one.

OOPS! Just realized, I need to season and fry some tortilla strips at some point.

No rush though. The Greek I have pita chips for.

That should be nice! Fresh lime juice AND ZEST, and a pinch of sugar and salt.

Let the tortilla stips absorb that and then fry 'em.

And the 'TexyMexy' salad has taco meat and black beans, 3 cheeses (cheddar, cotija, and pepperjack), fresh corn, onion. green olives, tomato, and a lil southwest chipotle dressing. I'll heat up the meat and beans, add them in, and mix with the dressing when I sit down to eat.

I am over the moon about my salad kits.

I want to get more veggie in 'cause I know it's good for me, right? I used to buy kits but there's $3.50-4 a pop. So $12 a week....

I can make a big bowl of salad base (3 leafy things) for the family and have my salads with great variety and less expense.

I'm trying to be healther too. I salute your discipline.
