Fish tacos. Homemade tortillas, fresh tilapia, cabbage, pico de gallo, sour cream, queso fresco.

The fish came out REALLY nicely. I was happy with it. Lubed the pan (nonstick) with Olive Oil and butter, and then HEATED it and added the fish. Basted it in the pan by tilting it back and forth. Really let it HAVE the heat undisturbed (seasoned what I could see) and then flipped it for the other side. Add fresh lime juice. It had crispy edges but tender insides and good flavor.
