I have a gas oven, I believe the idea is pan sear then stick pan in pre-heated oven to finish

Oh, no, that's right...I have a couple of eggplant and some tomato sauce. Could make a mini parmesan.

And yes, Catnik, that's how I do it. Marinate steak, heat pan on high, preheat oven to 325, cook steak in pan on stove for two minutes each side, put the meat thermometer in, then shove it in the oven until it hits 145 deg. internal temp.

Basically same thing on the grill -- put em over direct heat until seared, then move to indirect heat and close the lid. Meat thermometers are my friend.

And I don't find it dries out as long as I use the thermometer.
