So a new take on omelette. Ready?

So, warm/cook up your fillings, whatever's going in the omelette. Add eggs, season, stir, cook. Whatever your usual is, is fine.

THEN (plot twist)

Top your flat (unfolded) omelette with cheese AND.... ready? A tortilla. Just flat on top of your flat omelette.

When the eggs are cooked and cheese is melted, carefully edge around the omelette and under it and then flip to crisp up the tortilla side.

You can fold it, roll it, or serve it flat.

It's like that, yes. But the tortilla cooks/melt into the eggs, so nothing is apt to fall out.
