Apparently, when you slice a round loaf into quarters on the surface before you bake it to give it a nice surface pattern, and it bakes, part of the surface curls up. These parts are called ears.

Ok, the bread has a very nice crust; firm, but not to the point it lacerates your mouth. Nice, even crumb. My only (minor!) complaint is it didn't really hold its shape from the basket to the oven; it blobbed out. 9/10 would make again.

Shady, a recommendation is to sling parchment under it in basket to make moving to oven easier without losing the spring from the last rise!
