Dinner: Asparagus & Peas Spring Salad, Lamb with rosemary, garlic, & lemon, Best Mushrooms Ever, Holiday ham sandwich on house whole-meal bread, Fruit salad in an orange bowl with mint syrup and shortbread.

Rae, ok, so.... slice up your mushies how you like; thin, thick, whatever.

50-50 butter and olive oil. I eyeballed it.

Pan HOT with lubrication in, lay your mushies in, don't crowd.

S&P.

WATCH your heat. I went with a med-hot pan, I wanted color but no burn.

YMMV.

Scoop them out when they are done Just Right and put more in the pan. Repeat.

Oh! Before you scoop them out hit them with a shot or two of Balsamic vinegar!
