I made a new recipe for dinner. Tofu and butternut squash and broccoli and a tahini sauce. Way outside of my usual fare, but it was GOOD.

Of course, it turns out my husband wasn't home for dinner. So my victory is somewhat dimmed. sigh

Just a lot more work than I would normally do for eating on my own. Still...probably better off that way.

It is. But this marinated in soy sauce before I cooked it, and it was yummy.

Well, I am not big on Squash, but when you can make something look appealing despite my biases, you're doing something right 😉

Oh, roasted butternut squash is So Good. It caramelizes beautifully.
