Some of the stuff I can't do till the day-of. It's a Tea; little sandwiches, sweets, tea of course, so on.

who is having a tea?

Tea is our Easter dinner. I bought everything yesterday. I've made the fillings and such that needed doing. I have some cookie dough chilling per instructions. But some stuff is so simple, straight "assemble and bake" that it needs must wait till day of.

We are doing a holiday-ham sandwich, tuna, chicken, and egg salads, a puff pastry/asparagus with swiss thing, scones, carrot cake cookies, s'more mini-tarts....

I am thinking I might do two kinds of scones but I wanted to scale things back a bit? More/less stress....

The holiday ham sandwich is something I'm working on, not quite there yet but close.

King's Hawaiian rolls; compound butter with cinnamon, brown sugar, nutmeg, ginger, cloves; deli ham, and a light layer of pineapple and cherries.

Trying to do a tea sandwich that is the traditional ham served on such occasions.

I am still thinking of doing mini shepherd's pies, but haven't found the ground lamb yet and not sure I want to complicate things?

Yes.

The shepherd's pie? I have ramekins for that. Shepherd's pie is more like lamb stew under a mashed potato topping; doesn't have a bottom crust.
